    Quick list: some experience selecting the most appropriate virtualization scheme for a particular application (or the counterpart, NOT selecting the worst environment); Hardware selection for virtualization (the HE); P2V migrations; V2V migrations (including from one virtualization system to another); HA Virtualization (like vmotion & storage vmotion); networking within a virtual environment, storage within a virtual environment, an understanding of resource oversubscription vs performance...

      What he said plus the most important of all: The ability to cause a box to be checked on an HR form.

      In other words, in many cases they just know virtualization is good (or at least trendy) and want to get some.

        Meeting one set of expectations gets you hired; meeting the other set keeps you from getting fired.

        There are situations are when they know it's trendy, want to get some, and need to be talked out of it. It's probably beneficial for your reputation if you can recognize those in advance, and opt out if you're not up to the task.
